Sun-Dried Tomato Soup

2 cups soupThis recipe can easily be multiplied and makes very good leftovers.
Serve with Grilled Pimento Cheese Sandwich or Grilled Smoked Gouda Sandwich or Tomato Grilled Cheese Sandwich
AND
Serve with Caesar Salad or Grilled Caesar Salad or Warm Zucchini, Basil and Tomato Salad or Zucchini Salad
Ingredients
1 tsp. Olive oil |
1 large White onions (diced) |
1/2 cup Tomatoes, sun-dried |
1/8 tsp. Salt |
1 cup Water |
1 cup No salt added vegetable stock |
2 ounce Semisoft goat cheese |
Instructions
Add the onion and cook for about 5 minutes. Stir frequently.
Add the sun-dried tomatoes, canned tomatoes, salt, water, and vegetable stock.
Stir, cover, and simmer for 40 minutes.
Remove from the heat, let cool slightly and puree using a blender or stick blender.
Add the goat cheese and blend until the cheese is melted and the soup is smooth. Serve.
Serve this recipe with one of these starch side dishes.

Zucchini Salad
Whisk together the olive oil, balsamic vinegar, maple syrup, salt, pepper and marjoram. Place in the refrigerator while cutting the zucchini. Cut the zucchini into medium dice. Tomato soup is one of my favorites. This version using a few sun-dried tomatoes makes it even more savory and satisfying. You do have to be careful with sun-dried tomatoes – if you use too many your recipe will become bitter.
