Chef’s Salad with Citrus Vinaigrette

This recipe can be multiplied, but once tossed with the dressing, does not keep well.

Ingredients
1 clove Garlic, raw (peeled and crushed) |
2 Tbsp. Olive oil |
1/4 cup Lemon juice |
5 Tbsp. White wine vinegar |
2 Tbsp. Honey |
1/2 tsp. Ground mustard |
12 cup shredded Romaine lettuce |
1 cucumber (8-1/4 inch) Cucumber (sliced) |
4 small whole (2-2/5 inch dia) Tomatoes (quartered) |
1/4 medium (approx 2-3/4 inch long, 2-1/2 dia.) Red bell peppers (diced) |
4 large Egg(s) (hard boiled)(peeled and quartered) |
4 ounce Reduced sodium ham (diced) |
4 ounces Sliced Deli Turkey Breast |
4 ounce Reduced fat cheddar cheese (diced) |
Instructions
Place garlic, olive oil, lemon juice, vinegar, honey and mustard in a blender and blend on high for about 15 seconds.
Chill dressing for at least an hour.
For each serving toss together in a bowl 3 cups of chopped romaine lettuce, 1/4 of the sliced cucumber, and three Tbsp. dressing.
Place the dressed greens and cucumbers in a bowl and top with the tomato, diced red pepper, hard boiled egg, ham, turkey and sliced cheese.
Serve while chilled.

This healthy recipe is the traditional Chef’s Salad. There are other dressings that you can use, including the Honey Mustard or the Parmesan Peppercorn and they will have a similar amount of calories.
