Roasted Garlic Caesar Salad Dressing

about 1 TablespoonThis recipe can easily be multiplied by 2 and keeps well, tightly sealed in the refrigerator, for about 5 – 7 days.
This recipe requires that you make Roasted Garlic first.
Ingredients
10 clove Roasted Garlic (about 1 whole bulb) |
2 tsp.. Worcestershire sauce |
1/4 tsp., ground Black pepper |
2 Tbsp. Lemon juice |
1 Tbsp Dijon mustard |
1/3 tsp.. Honey |
1 1/2 ounce Parmesan cheese (grated) |
1/2 cup Nonfat Greek Yogurt |
Instructions
Chill for at least 2 hours.

I love Caesar Salad and there are a lot of variations on the classic dressing. There are no less than three variations already on this site: Classic Caesar, South of the Border Caesar, and White Bean Caesar. Why do another?
This recipe slightly tweaks what we think is a very good version but the roasted garlic brings a much more mellow flavor to the dressing. The difference is subtle unless you taste them side by side. That this version is not necessarily better, just mellower.
Roasted garlic makes a great foundation for salad dressings and sauces. It is always worth having some on hand for that, but you can also use individual cloves tossed into a pasta sauce or salad at the last minute to add a rich umami flavor to the dish without overpowering the other ingredients.
