Bay Scallops with White Wine and Herbed Butter

4 ounces scallops and 2 Tbsp. butterThis recipe may be halved. Leftover butter keeps well for about 3 to 4 days tightly covered in the refrigerator or it can be frozen.
Serve with Roasted Beets or Pan Grilled Broccoli or Pan Grilled Asparagus or Healthy Caesar Salad

Ingredients
3 Tbsp. Unsalted butter |
1 1/2 tsp. Garlic, raw (minced) |
3 Tbsp. chopped Shallots, raw |
5 Tbsp. Fresh parsley |
1 Tbsp. Fresh dill |
3 Tbsp. Lemon juice |
2 Tbsp. Sherry |
32 Ounce Sea scallops (Bay Scallops) |
4 Tbsp White wine |
Instructions
Preheat the oven to 325°F.
Place 4 ounce portions of scallops in au gratin or similar dish.
Add 2 Tablespoons of herbed butter to each dish.
Add 2 Tablespoons of wine to each dish.
Place in the pre-heated oven and cook until the scallops are done - about 12 - 15 minutes (this will be when they turn milky white but are still slightly tender to the touch).
Serve this recipe with one of these starch side dishes.
