Moroccan Shrimp – Coumadin Safe Version

Ingredients

1 Tbsp. Olive oil
1 large White onions (diced)
2 clove Garlic, raw (minced)
2 Large Red bell peppers (diced)
2 15 ounce can No salt added canned diced tomatoes
1 1/2 tsp.. Ground cumin
1/2 tsp. Ground cinnamon
1 tsp. Paprika
1/4 tsp. Salt
1 to taste Black pepper
16 Ounces Shrimp, raw (peeled and deveined)
1 Tbsp. Fresh parsley (coarsely chopped)

Instructions

Place the olive oil in a large skillet over medium heat.

Add the onion and garlic and cook for about 3 to 5 minutes until the onions begin to soften.

Add the pepper and cook for 2 minutes, stirring frequently.

Add the tomatoes, cumin, cinnamon, paprika, salt and pepper.

Cook for about 20 minutes, stirring occasionally.

Add the shrimp and cook for about five minutes.

Add the parsley, stir and serve.

Serve this recipe with one of these starch side dishes.
