Cajun Chicken Livers

4 ounces chicken livers with veggies

This recipe can be multiplied but does not make very good leftovers.

Serve with Dirty Rice or Brown and Wild Rice or Brown Rice or Brown Rice with Parsley

Cajun Chicken Livers

Ingredients

2 tsp. Olive oil
1 medium White onions (red onion; thinly sliced)
8 ounces Crimini mushrooms (thinly sliced)
8 ounces Chicken livers
1/8 tsp. Salt
1 to taste Black pepper
2 tsp. Salt Free Creole Seasoning
1/3 Cup Beer (or gluten-free beer)

Instructions

Place the oil in a large skillet over medium-high heat.

Add the onions and cook, stirring frequently, for about 5 minutes, until they begin to brown.

Add mushrooms and cook for 1 minute, then cover and reduce heat to medium.

Cook for another 5 minutes, stirring occasionally.

Add the livers, salt, pepper and creole seasoning, stir, and cook for 2 minutes or until the livers start to brown.

Add the beer, stir, and recover. Reduce heat to medium-low and allow to simmer, stirring occasionally, for 8-10 minutes. Serve over rice.

Serve this recipe with one of these starch side dishes.
