I am on Coumadin and am trying to stay away from foods high in K. I looked on your list of foods and you have cucumbers as low. The list that my doctor gave to me has it as high. Also, you list V-8 juice as low. Doesn't that have lots of green vegetables in it?
One cup of cucumber slices with the peel has only 17 micrograms (mcg) of Vitamin K. This would be a low to medium amount.
The Vitamin K content of V8 Juice is not reported by Campbell's to the USDA for their database. The database does report generic "tomato and vegetable juice, low sodium" as having 13 mcg of Vitamin K.
