Minted Peas

This recipe can easily be multiplied and leftovers are fair.

Minted Peas

Ingredients

3 cup Water
8 ounces Fresh peas (or frozen if need be)
2 tsp.. Unsalted butter
2 tsp.. Honey
1 tsp. Fresh mint (or 1/4 tsp.. dried)
1/8 tsp. Salt

Instructions

If you are using fresh peas, pick over them and discard any brown ones.

If you are using frozen thaw them in a strainer under cool water.

Place the water in a small sauce pan and bring to a boil.

Add the peas and cook for 8 minutes. (If using frozen peas cook only for about 3 minutes.)

While the peas are cooking place the butter, honey, mint, and salt in a small mixing bowl.

After the peas have cooked, strain them and add to the mixing bowl with the other ingredients.

Toss using a spoon or rubber spatula.

Serve as soon as the peas are well blended with the other ingredients.

This is the most wonderful side dish. If you can find fresh peas in the market, purchase them and eat them with the next meal. The freshness of the mint and peas with just a hint of sweet honey is delightful. All of this with tons of fiber, lots of Vitamin C and Vitamin A in a serving of lovely legumes.
