Chef’s Salad with Citrus Vinaigrette

This recipe can be multiplied, but once tossed with the dressing, does not keep well.
Ingredients
| 1 clove Garlic, raw (peeled and crushed) |
| 2 Tbsp. Olive oil |
| 1/4 cup Lemon juice |
| 5 Tbsp White wine vinegar |
| 2 Tbsp. Honey |
| 1/2 tsp. Ground mustard |
| 12 cup shredded Romaine lettuce |
| 1 medium Cucumber (sliced) |
| 4 small whole Tomatoes (quartered)(or 20 cherry tomatoes: 5 per serving) |
| 1 medium Red bell peppers (diced) |
| 4 large Egg(s) (hard boiled)(peeled and quartered) |
| 4 ounce Reduced sodium ham (diced) |
| 4 ounces Sliced Deli Turkey Breast (diced) |
| 4 ounce Reduced fat cheddar cheese (diced) |
Instructions
Place garlic, olive oil, lemon juice, vinegar, honey, and mustard in a blender and blend on high for about 15 seconds.
Chill dressing for at least an hour.
For each serving, toss together in a bowl 3 cups of romaine lettuce, 1/4 of the sliced cucumber and 3 tablespoons dressing.
Place the dressed greens and cucumbers in a bowl and top each serving with 1 tomato, 1/4 of the diced red pepper, 1 hard boiled egg, 1 ounce ham, 1 ounce turkey, and 1 ounce cheese.
Serve.

This healthy recipe is the traditional Chef’s Salad. There are other dressings that you can use, including the Honey Mustard or the Parmesan Peppercorn and they will have a similar amount of calories.
