Reduce
To condense a liquid by boiling. As the liquid boils, the water evaporates, concentrating and thickening the liquid. The flavors intensify as the volume is reduced. This is usually done in the preparation of sauces, stocks or soups and the result of the concentration is referred to as a reduction.
Generally speaking reducing is done with a more gentle boil or a simmer.
