Whitefish with Cumin Butter

4 ounces fish with butterThis recipe can be multiplied but does not make very good leftovers.
Serve with Brown and Wild Rice or Mashed Yams with Mint or Wild Rice
AND
Serve with Kale with Nutmeg and Honey or Parmesan Squash or Parmesan Zucchini
Ingredients
1 Small Shallots, raw (finely minced) |
2 tsp.. Unsalted butter |
1/2 tsp.. Ground cumin |
1/2 tsp. Paprika |
1/8 tsp. Dried mint |
1/4 tsp. Salt |
1 to taste Black pepper |
1 tsp. Olive oil |
8 ounces Fresh halibut (2 4-ounce filets)(drum, flounder, sole or trout will also work) |
Instructions
Preheat oven to 325°F.
Place the oil in a medium skillet and then put the filets in the pan. Top with 1/2 of the butter. Place the pan in the oven.
Bake for about 6 minutes and turn. Top with the other half of the butter and bake for about 4 - 6 minutes. Serve.
Serve this recipe with one of these starch side dishes.
