Ingredients
1 1/4 cup (8 fluid ounces) Coffee |
2 Tbsp. Sugar |
3 large Egg yolk(s) |
1/4 cup Sugar |
8 ounce Cream cheese (mascarpone is preferred) |
8 ounce Balocco Savoiardi Ladyfingers (or gluten free lady fingers) |
Instructions
Add 2 tablespoons sugar while hot and stir well.
Place the coffee in the refrigerator to chill.
Set up a large bowl on the counter and add enough ice to cover the bottom of the bowl. Set aside.
Place a medium sauce pan with about 2 inches of water in the bottom over high heat.
When the water is boiling, place a small to medium glass bowl on top of the pan and reduce the heat to medium.
Place the egg yolks and 1/2 cup sugar in the glass bowl.
Cook while whisking frequently until the temperature of the mixture reaches 150°F.
Remove the glass bowl and place on top of the ice in the larger bowl.
Whisk the mixture for another 1 to 2 minutes until cool.
Add the mascarpone to the bowl and fold together until well blended.
Prepare an 11 inch by 7 inch oblong Pyrex dish by lining it with foil.
Pour the cold coffee into a second shallow dish.
Dip the ladyfingers into the coffee quickly. You should not dip for more than one second on each side.
Place the dipped ladyfingers in the prepared Pyrex dish. It is best to place them top (curved) side down in the dish.
Repeat with each of the ladyfingers lining up the cookies in tight rows until there are 8 in the first layer.
Top with half of the sugar/egg mixture and spread evenly across the ladyfingers. Be gentle so as to not tear the cookies.
Repeat with the remaining 8 ladyfingers dipping on each side and placing in the Pyrex dish.
Top with the remaining cream filling.
Cover the dish and refrigerate.
To serve gently dust with the cocoa (it is best to use a sifter or a sieve to evenly coat the top of the dish).

You can purchase the espresso or make it yourself. If you don’t have access to either, you can make very strong coffee with double the coffee grounds you would normally use. The coffee should be to your preference, neither too strong nor too weak.
Also, traditional recipes call for alcohol – usually cognac but most often marsala wine. A single tablespoon is enough to bring a bit more richness to this dish. Add it to the eggs and sugar when making the custard.
The natural action would be to put the ladyfingers in the Pyrex dish right side up (curved side up), but the bottoms are flatter and it makes it easier to spread the filling.
