Simple Hummus Sandwich

Ingredients
8 slices Whole wheat bread |
1 cup Simple Hummus |
2 cup Fresh spinach (or arugula or other greens) |
1/2 medium Cucumber (thinly sliced) |
1 medium Apples (or pear)(thinly sliced) |
4 slice Reduced fat cheddar cheese |
1 large Tomatoes (thinly sliced) |
Instructions
Gather all ingredients and equipment.
Toast the bread.
Spread the hummus on all slices of bread, about 1 tablespoon of hummus per slice.
Layer the remaining toppings evenly among the sandwiches and serve.

This is a great sandwich and using hummus with veggies is a terrific way to improve your Mediterranean diet score. Try veggies of your choice – peppers and mushrooms are great – and you can substitute any greens that you love.
