Seared Sweet and Savory Pork

4 ounces pork with sauceThis recipe can be multiplied and makes great leftovers. Note that active cooking time does not include marinating time.
Serve with Plain Mashed Potatoes or Dirty Rice or Plain Mashed Potatoes – Low Sodium Version or Hoppin’ John

Serve with Parmesan Squash. or Green Beans with Red Onion or Maple Sweetened Collard Greens or Parmesan Zucchini or Creamed Collard Greens
Serve with Coumadin Safe Dirty Rice or Dirty Rice or Hoppin’ John or Low Sodium Plain Mashed Potatoes or Plain Mashed Potatoes
AND
Serve with Creamed Collard Greens or Maple Sweetened Collard Greens or Parmesan Squash or Parmesan Zucchini
Ingredients
1 Tbsp Molasses |
1 Tbsp. No salt added tomato paste |
1/4 tsp. Salt |
2 tsp.. White wine vinegar |
2 tsp. Caper liquid |
1 tsp.. Smoked paprika |
1 pound Pork tenderloin |
1 Tbsp. Olive oil |
Instructions
Add the pork tenderloin and toss to coat well. Let marinate for at least an hour - overnight is best.
When ready to cook place a large skillet in the oven and preheat to 400°F.
When the pan is hot add the olive oil and then the pork.
Roast for about 20 minutes. Turn every five minutes or so.
Let rest for about two minutes before carving.
Serve this recipe with one of these starch side dishes.
