Sauteed Leeks with Pinenuts

This recipe can be multiplied but does not make very good leftovers.
Ingredients
1 tsp. Olive oil |
1 Tbsp. Pine nuts |
2 small (about 8 ounces) Leeks (washed well and sliced crosswise) |
1/8 tsp. Salt |
1 to taste Black pepper |
Instructions
Place the olive oil in a large skillet over medium-high heat. Add the pinenuts and cook carefully until they are golden brown.
Add the leeks and cook, stirring frequently, until they begin to soften. Add the salt and pepper and cook for another 2 minutes. Serve.
