Mandarin Pomegranate Spritzer

Ingredients
2 medium Tangerines, (mandarin oranges), raw (peeled and sectioned) |
1/4 cup Sugar |
6 leaves Fresh mint |
1/2 fruit (2 inch dia) Limes, raw (juiced) |
1 cup Pomegranate juice, bottled |
2 can or bottle (16 fluid ounces) Beverages, carbonated, club soda |
Instructions
Peel the satsumas and pull the fruit in half. Place the peeled satsumas in the bottom of a pitcher.
Pull the mint leaves from the stem and add them to the pitcher. Discard the stem.
First squeeze the lime juice into the pitcher, then add the halved limes to the pitcher.
Add the sugar to the pitcher and muddle together the satsumas, mint, lime and sugar until the satsumas and mint are broken up well.
Add the pomegranate juice and club soda to the pitcher, stir and serve. (NOTE: Open the club soda very slowly and gradually to avoid it pouring over the sides.)
Serve chilled or over ice, pouring a little Satsuma and mint in each of the glasses. Or, garnish with a sprig of mint.

Lactose

You can use any orange in this but smaller oranges like satsumas, mandarins or clementines are perfect.
Grating about a teaspoon of the orange zest adds a lot of flavor and is worth the extra step.
This is a fun, flavorful alternative to soda. Try any of your favorite fruits in this spritzer! You can make the base far in advance, but don’t add the club soda until ready to serve.
