Recipe Notes

Carrot and Raisin Salad is a classic. It is one of those recipes that people forget about, but when you take a bite it immediately transports you to a warm summer day sitting on the lawn with the barbecue on the grill.

The great thing is that it’s so easy and quick and perfect for your picnic or potluck supper. Even better, it has four grams of fiber and helps add a point to your Mediterranean Diet Score.

"There are few things so pleasant as a picnic eaten in perfect comfort."

W. Somerset Maugham, Author
