Roasted Vegetable Medley

Ingredients
1 medium White onions (cut into wedges) |
1 bunch Broccoli, raw (cut into florets) |
1 head large (6-7 inch dia.) Cauliflower, raw (cut into florets) |
1 medium Carrots, raw (peeled and diced small) |
2 Tbsp. Olive oil |
1/4 tsp. Salt |
1 to taste Black pepper |
Instructions
Preheat the oven to 400°F (200°C).
In a medium bowl, toss all ingredients. Mix well.
Spread the vegetables in a single layer on a cookie sheet. Bake in the oven for 20-25 minutes, or until the vegetables start to brown on the edges.
