Tomato & Cucumber Salad with Red Wine Vinaigrette

Tomato & Cucumber Salad with Red Wine Vinaigrette


2 Tbsp. Red wine vinegar
1 1/2 tsp. Dijon mustard
1 tsp.. Honey
1/2 Tbsp. chopped Shallots, raw
1/48 tsp. Salt
1 to taste Black pepper
1/4 cup Olive oil
1 1/2 tsp. Fresh thyme (chopped)(or fresh parsley or dill)
2 medium Tomatoes (cut into wedges
1 cucumber (8-1/4 inch) Cucumber (cut into 1/2 inch half rounds)
1 ounce Red onion (thinly sliced)


Gather all ingredients and equipment.

For the Vinaigrette

Place the vinegar, mustard, honey, shallots, salt, pepper, oil, and herbs in a blender.

Start on a low speed then gradually increase to a high speed and blend until the dressing is smooth and looks creamy.

For the Salad

Toss the tomatoes, cucumbers, and onion together in a large bowl with the dressing.
