Quick Tomatillo Salsa – FSP

Ingredients
5 medium Tomatillos, raw |
1/2 medium Red onion (roughly chopped) |
2 pepper Jalapeno pepper (stemmed, seeded, and roughly chopped) |
2 lime yields Lime juice, raw |
1/4 tsp. Salt |
1 to taste Black pepper |
1/2 tsp. Ground cumin |
1 cup Coriander (cilantro) leaves, raw (roughly chopped) |
1/3 cup No salt added vegetable stock |
Instructions
Gather all ingredients and equipment.
Char the tomatillos and red onion over an open flame or under the broiler.
Place tomatillos, onion, jalapenos, lime juice, salt, pepper, and cumin, in batches if necessary, in a blender or processor and blend until smooth.
If the salsa is too thick, add vegetable stock, 1 Tablespoon at a time, as needed.
Pour in a bowl and fold in cilantro. Serve.
