This recipe makes good leftovers. Keeps well, refrigerated, for 3-5 days.

Pinto Sloppy Joes

Ingredients

2 tsp. Olive oil
1 medium White onions (diced)
2 Medium stalk Celery, raw (diced)
1 tsp. Salt
1/2 Medium Green bell peppers (diced)
2 Tbsp. Red wine vinegar
1 Tbsp. Worcestershire sauce
2 tsp. Paprika
1 Tbsp. No salt added tomato paste
2 Tbsp. Low sodium ketchup
1 Tbsp Light brown sugar
1 to taste Black pepper
2 15 ounce can Canned no salt added pinto beans (drained and rinsed)
1 cup No salt added vegetable stock
6 roll Whole wheat hamburger buns

Instructions

Gather all ingredients and equipment.

Heat the olive oil over medium-high heat in a large skillet. Add the onion, celery, carrot, and bell pepper. Cook for about 5 minutes, until onion is translucent, stirring occasionally.

Add the vinegar, Worcestershire sauce, paprika, tomato paste, ketchup, brown sugar, pepper, beans and stock. Stir to incorporate.

Reduce the heat to medium low and simmer for about 20 minutes, stirring occasionally.

As the beans soften, mash some of them against the side of the pan to make the mixture thicker.

Serve over lightly toasted whole grain buns.

Serve this recipe with one of these vegetable side dishes.
