Ingredients
1 cucumber Cucumber (peeled, seeded and sliced into crescents) |
2 tsp. Olive oil |
2 tablespoon Rice Vinegar |
1/8 tsp. Salt |
1 to taste Black pepper |
1/4 tsp. Dried mint |
Instructions
Fold together the cucumbers, olive oil, rice vinegar, salt, pepper and peppermint.
Chill.

Cucumbers in vinegar are an old Southern recipe. Ordinarily made with white vinegar, this variation is a uses rice vinegar because it’s not as acidic and lets the sweetness of the cucumber and mint come through better.
