Black Bean Burgers

1 burger with bunThese hearty Black Bean Burgers make great leftovers and freeze well for a quick lunch or dinner.
Serve with French Fries
Ingredients
| 1 15 ounce can Canned no salt added black beans (drained and rinsed) |
| 1/2 Large Red bell peppers (small dice) |
| 1/2 medium White or yellow onions (small dice) |
| 4 ounce Reduced fat cheddar cheese (shredded) |
| 1 clove Garlic, raw (minced) |
| 1 Tbsp Ground cumin |
| 1 tsp., leaves Dried oregano |
| 1/4 tsp. Salt |
| 1 dash Black pepper (to taste) |
| 1/8 tsp. Cayenne pepper |
| 1 large Egg(s) |
| 3/4 cup Whole Wheat Classic Style Breadcrumbs (unseasoned)(or gluten-free breadcrumbs) |
| 1 spray as needed Spray olive oil |
| 6 roll Whole wheat hamburger buns (or gluten-free hamburger buns) |
Instructions
Preheat oven to 375F.
Mash beans in a large bowl with a fork or potato masher.
Mix in red pepper, onion, cheese, garlic, seasonings, egg and breadcrumbs.
Mix well.
Shape into 6, 4 ounce patties.
Line a baking sheet with foil and spray lightly with cooking spray.
Place burger patties in a single layer.
Cook in oven until burgers firm up and reach internal temperature of 165F, about 12 minutes.
Serve on a toasted whole wheat or gluten-free bun with lettuce, tomato, and other favorite condiment.
