Whitefish with Cumin Butter

This recipe can be multiplied but does not make very good leftovers.

Ingredients

1 Small Shallots, raw (finely minced)
2 tsp.. Unsalted butter
1/2 tsp.. Ground cumin
1/2 tsp. Paprika
1/8 tsp. Dried mint
1/4 tsp. Salt
1 to taste Black pepper
1 tsp. Olive oil
8 ounces Fresh halibut (2 4-ounce filets)(drum, flounder, sole or trout will also work)

Instructions

Cream together the shallot, butter, cumin, paprika, mint, salt and pepper. This is best done at least an hour in advance but overnight is better.

Preheat oven to 325°F.

Place the oil in a medium skillet and then put the filets in the pan. Top with 1/2 of the butter. Place the pan in the oven.

Bake for about 6 minutes and turn. Top with the other half of the butter and bake for about 4 - 6 minutes. Serve.

Serve this recipe with one of these starch side dishes.
