Salmon with Chili Lime Glaze

Ingredients

1 tsp. Olive oil
1/2 tsp. Lime zest (minced)
1 lime yields Lime juice, raw
2 tsp.. Honey
1/8 tsp.. Ground cumin
1/4 tsp. Red Pepper Flakes
1/4 tsp. Paprika
1/8 tsp. Salt
1 to taste Black pepper
8 Ounces Fresh atlantic salmon (two 4-ounce filets)

Instructions

Preheat the oven to broil.

Place the olive oil in a bowl with the lime zest, lime juice, honey, cumin, red pepper flakes, paprika, salt, and pepper.

Whisk together until well blended.

When the oven comes to temperature place the salmon filets in a shallow baking dish.

Top with half of the chili lime sauce.

Place under the broiler for 5 minutes.

Top with the other half of the glaze and broil for another 4 minutes (for rare), 6 minutes (for medium rare) and 8 to 10 minutes until cooked through.

Serve.

Serve this recipe with one of these starch side dishes.

Recipe Notes

This recipe is amazingly flavorful. It is a perfect balance of tartness from the lime and freshness of lime zest. The honey and aromatics spices balance the tartness well and the spiciness really brings it all together.

You don’t need a lot of oil for this glaze. Salmon is a fatty fish, and as it cooks it will release some oil. If you use more oil in the pan or the glaze, this will be, quite simply, too greasy.

The 1/4 teaspoon of red pepper flakes is only sort of spicy and if you like spicier, feel free to add another 1/4 teaspoon at a time to taste.
