Asian Beef with Broccoli

This recipe can easily be multiplied and makes great leftovers. Reheat gently.

Asian Beef with Broccoli

Ingredients

2 tsp. Sesame oil
1 Tbsp. Ginger root, raw (peeled and finely minced)
1 large White onions (thinly sliced)
8 ounce Beef flank steak (thinly sliced)
8 ounces Broccoli, raw (cut into small flowerets)
2 Tbsp. Hoisin sauce
1 tsp. or 1 packet Chinese or Dijon mustard
1 to taste Black pepper
1/2 cup Low sodium chicken or vegetable stock
1 1/2 tsp.. Cornstarch
2 Tbsp. Water

Instructions

Place the sesame oil in a large skillet or wok over medium-high heat.

Add the ginger and onion and cook, stirring frequently, until the onions begin to soften.

Add the beef and cook for about 3 minutes until lightly browned.

Reduce the heat to medium and add the broccoli and toss well.

Cover and cook for about 5 minutes. Stir occasionally.

Add the hoisin sauce, mustard and pepper and stir well.

Cover and cook for another 5 minutes tossing a few times.

Add the chicken stock and toss.

Stir the cornstarch into the cold water until dissolved and then add the mixture to the pan.

Remove from the heat and stir well.

Serve over brown rice.

When we are working on a recipe it is important to look at lots of others and pick the best of each version.

Part of that quest is for the right ingredients that go in a dish as well as for technique.  As you might imagine there’s thousands of such Asian-style Beef with Broccoli recipes.  The big difference is mainly with thin sliced vs. cubed or thicker sliced beef.  There are some variations in how the sauce is made but this one with Dijon mustard is excellent.

Flank steak works great for this but make certain to cut the slices across the grain and they will be naturally tender. That said, you can use almost any good quality cut of lean beef you like.  If flank steak is cheaper than top round, by all means use it.
