Low Sodium Papaya Poppyseed Dressing

This recipe can be multiplied and keeps well for 4 days in the refrigerator.
Ingredients
1 1/2 cup 1 inch pieces Papayas, raw |
1/4 cup Nonfat Greek Yogurt |
1/4 cup Reduced fat sour cream |
1/2 cup Papaya nectar |
1/4 tsp. Salt |
2 Tbsp. Coriander (cilantro) leaves, raw |
2 Tbsp. Poppy seed |
Instructions
Place all ingredients in a blender and puree until smooth. Chill for at least an hour before serving and overnight is best.
