This recipe requires that you make Spicy Chickpeas with Quinoa and Lemon Yogurt Dressing first.

Ingredients
8 cup, shredded or chopped Boston or bibb lettuce (or any mixed greens) |
4 Tbsp. Cashews (toasted is best) |
2 medium Cucumber (diced) |
4 cup Spicy Chickpeas with Quinoa |
8 Tbsp Lemon Yogurt Dressing - Virtual |
Instructions
Gather all ingredients and equipment.
Place the mixed greens, cashews and cucumbers in a bowl.
Add 1 cup Spicy Chickpea with Quinoa and two tablespoons Lemon Yogurt Dressing and toss well.
Serve immediately. If not serving right away, leave the dressing on the side until ready to eat.
