Kale with Roasted Garlic Cream

4 ounces kale with sauceThis recipe makes good leftovers. Serve cold or reheat gently.
Ingredients
12 clove Roasted Garlic (1 head) |
1/3 cup No salt added vegetable stock |
1/8 tsp. Salt |
2 Tbsp 2% milk |
1/2 tsp.. Honey |
1/2 tsp.. White wine vinegar |
1 tsp. Olive oil |
8 ounces Kale, raw (central rib removed and thinly sliced crosswise) |
1 to taste Black pepper |
Instructions
Set aside.
Place the olive oil in a large skillet over medium-high heat.
Add the kale and the pepper and sauté, stirring frequently, for about 3 minutes or until wilted.
Add the sauce to the kale and toss well.
Serve.

Kale is a great vehicle for other terrific flavors. The bitterness of kale is offset well by other great flavors, especially a bit of sweetness. This recipe is a great example with the umami-sweetness of roasted garlic and a bit of salt and honey. In fact, this sauce would go really well with any slightly bitter greens, including collards, spinach, and turnip greens. Serve the greens alongside some jasmine rice to help soak up any extra sauce.
