Flank Steak with Paprika Sauce and Shallots

4 ounces steak and sauceThis recipe can be multiplied and makes great leftovers, especially as sandwiches.
Ingredients
1 tsp. Olive oil |
1 small White onions (diced) |
1 medium Red bell peppers (diced) |
1 Medium stalk Celery, raw (diced) |
1 tsp. Paprika |
2 clove Garlic, raw (minced) |
1/4 tsp. Salt |
1 leaf Bay leaves |
1 tsp. Fresh thyme |
1/2 cup White wine |
1/2 cup Water |
1 small whole (2-2/5 inch dia) Tomatoes (chopped) |
12 Medium Shallots, raw (peeled) |
1 spray Spray olive oil |
16 ounce Beef flank steak |
Instructions
The sauce needs to be stirred occasionally and should cook for about 30 minutes.
Preheat the oven to 425°F. Place a large skillet in the oven.
When the oven is hot spray the pan with olive oil. Add the flank steak. Return the skillet to the oven and cook for about 8 - 10 minutes. Turn and cook for another 6 - 8 minutes. Remove from the oven and let rest for about 2 - 3 minutes. Slice and serve topped with the sauce and 3 shallots per serving.
