Ingredients
1 large ear Corn, sweet, yellow, raw (kernels cut from cob) |
1/2 cup Water |
1/8 tsp. Salt |
1 to taste Black pepper |
1 cup Frozen lima beans |
1 pat (1 inch sq, 1/3 inch high) Unsalted butter |
Instructions
Bring the water to a boil and immediately reduce the heat until the corn is simmering.
Add the salt and pepper.
Cook for about 7 - 10 minutes until the water is almost evaporated.
Add the lima beans and cook for about 3 minutes until the water has almost evaporated.
Add the butter and toss until melted.
Serve.

This recipe using fresh corn gets two thumbs up from succotash haters. Take care because some frozen lima beans will have added salt. Check the package before buying.
You can also use frozen corn — about 1 cup equals an ear of corn. If you do, you don’t need the step with the water. Use the butter and brown the corn lightly.
