Spinach Garlic Goodenough

4 ounces spinachThis recipe can easily be multiplied and makes good leftovers. This recipe also requires making Roasted Garlic.
Ingredients
| 4 clove Roasted Garlic |
| 2 tsp. Olive oil (divided) |
| 1 tsp. Honey |
| 1/8 tsp. Salt |
| 1/8 tsp. Ground nutmeg |
| 1 dash Black pepper (to taste) |
| 8 Ounces Fresh spinach |
Instructions
Add 1 tsp. olive oil, honey, salt, nutmeg, and pepper and mix until smooth.
Heat a large pan on medium-high heat.
When the pan is hot, add 1 teaspoon olive oil to the pan along with the garlic mixture.
Add the spinach and toss until the spinach is wilted.
Serve immediately.

Roasted garlic is good for almost anything, and with just a bit of honey and nutmeg, simple sauteed spinach becomes a rich complement to any meal. This recipe is named for the fantastic New Orleans Chef Jason Goodenough who was kind enough to participate in our Celebrity Chef Dinner Series at the Goldring Center for Culinary Medicine. He served this terrific side dish at his restaurant, Carrollton Market.
