Pimento Cheese

This recipe can easily be multiplied and keeps well, refrigerated. Makes fantastic grilled cheese sandwiches!

Pimento Cheese


4 ounce Reduced fat cheddar cheese (grated)
1/2 cup Pimento, canned
2 medium Green onions (thinly sliced)
4 tsp. Reduced fat sour cream
1 to taste Black pepper


Place the cheese, pimentos, green onion, and sour cream in a bowl and fold together until blended.

Chill well before serving.

Recipe Notes

There are a couple of things about this recipe that really make it work. One is the thinly sliced green onion, and the second is to add a LOT of black pepper. This is great for parties – serve it as a dip with veggies – but also makes fantastic sandwiches, grilled and ungrilled.
