Roasted Curried Cauliflower

This recipe can be multiplied and will keep for a few days in the fridge. Reheat gently or use in salads.

Ingredients
1 medium head Cauliflower, raw (about 1 pound, broken into flowerets) |
1 Tbsp. Olive oil |
1/4 tsp. Salt |
1 to taste Black pepper |
1/2 tsp. Curry powder |
1/2 tsp. Ground turmeric |
1/4 tsp., ground Ground cardamom |
Instructions
Place a medium-sized skillet in the oven and preheat to 325F.
Mix the oil, salt, pepper, curry powder, turmeric, and cardamom together in a medium bowl.
Add the cauliflower and toss to coat.
Place the cauliflower in the preheated pan and roast for 20 to 25 minutes. Stir occasionally.
Serve.

Cauliflower goes so well with so many seasonings. This is a quick and easy side dish that is delicious with spicier recipes. As a relative of broccoli, cauliflower is a bit higher in Vitamin K so you might want to avoid it if you are on Coumadin (warfarin).
