Cucumber Yogurt Sauce

This recipe can be multiplied and makes great leftovers. Keeps well in the refrigerator for about 48 hours.

Ingredients

1/2 cucumber Cucumber (seeded but not peeled)
1/2 cup Nonfat Greek Yogurt
1 Tbsp. Fresh oregano (minced)
1 medium Green onions (thinly sliced)
1/8 tsp. Salt
1 to taste Black pepper

Instructions

Grate the cucumber. Place it in a bowl with the yogurt, oregano, green onion, salt and pepper. Chill.
