This recipe can easily be multiplied and makes great leftovers. Keeps well in the refrigerator for about 36 hours.

Cilantro Garlic Sauce

Ingredients

2 cup Coriander (cilantro) leaves, raw
2 clove Garlic, raw (minced)
3 Tbsp. Olive oil
1/4 tsp. Salt
1 cup Nonfat Greek Yogurt
1 tsp.. Honey
1 to taste Black pepper

Instructions

Place the cilantro, garlic, olive oil, lime juice, and salt in a blender or mini chopper.

Process until smooth.

Fold together with the yogurt and add the black pepper to taste.

Chill well before serving.

This is balanced by the tart yogurt and lime and rounded out with the sweetness of just a touch of honey. This is the type of recipe where you want to use the best extra virgin olive oil you can afford. The fruitiness really comes through.

Best of all this is amazingly versatile. You can serve this on almost any seafood, chicken, or pork. Use the leftovers on your sandwiches with cheese and tomatoes, or better yet, hard-boiled egg, cucumber, and sprouts.
