Cilantro, Garlic, and Avocado Crema

This recipe can easily be multiplied and will keep well for up to 48 hours in the refrigerator.

Ingredients
1 clove Garlic, raw (finely minced) |
1/2 tsp. Lime zest |
1 cup Whole milk greek yogurt |
1 medium Avocados, raw |
1 cup Coriander (cilantro) leaves, raw |
1/4 tsp. Salt |
1 to taste Black pepper |
Instructions
Place the garlic, lime and lime juice in a blender or mini-chopper.
Pulse for about 1 minute until the garlic is as small as possible.
Add the yogurt and pulse until blended.
Add the avocado, cilantro, salt and pepper.
Pulse until smooth.
Chill well before serving.

You may have had an avocado crema like this at a Mexican or Southwestern restaurant. It make a great topping for almost anything, with all of the flavors coming through just right – lime, garlic, avocado, and cilantro. Some versions are a bit spicy, and you could add some crushed red pepper flakes or a bit of cayenne pepper to this recipe and the crema will really pop.
