Coq au Riesling

4 oz chicken with vegetables and sauceThis recipe can easily be multiplied and keeps well for 3-4 days. Leftovers are almost better than fresh.
Serve with Brown Rice or Low Sodium Plain Mashed Potatoes or Plain Mashed Potatoes or Roasted Potatoes
Ingredients
1 ounce Mushrooms, shiitake, dried (or dried porcini mushrooms) |
1 cup Water (boiling) |
2 Ounces Link Sausage (cut into small dice) |
1 large Leeks (sliced lengthwise and thinly sliced crosswise) |
12 ounces Boneless, skinless chicken thighs |
1/4 tsp., ground Dried tarragon |
1/4 tsp., ground Black pepper |
1/4 tsp. Salt |
2 cup Riesling |
1/4 cup 2% milk |
Instructions
Place the mushrooms in a small bowl and add the boiling water.
Place the diced sausage in a medium sauce pan over medium high heat.
Cook until the sausage begins to crisp slightly and remove to a plate.
Add the leeks to the pan and cook for about 3 minutes until they are slightly wilted.
Add the chicken thighs, the sausage, tarragon, pepper, salt, and Riesling to the pot. Stir
Strain the mushroom tea into the pan.
Chop the mushrooms into 1/4 inch dice and add to the pot. Stir.
Cover the pan and place in the oven.
Cook for 40 minutes.
Remove from the oven.
Gently stir in the milk and serve.
Serve this recipe with one of these starch side dishes.
