Coconut Pecan Date Rolls

Ingredients

14 dates Dates, medjool (about 1 3/4 cup)
3/4 cup, chopped Pecans
3/4 cup, shredded coconut meat, raw (unsweetened, divided)

Instructions

Gather all ingredients and equipment.

Place the dates, pecans and 2/3 cup of the coconut in a food processor or blender.

Blend together until mixture forms a paste.

Remove from the food processor and shape into 17 balls, about 1 tablespoon each.

Roll the balls in the remaining coconut.

Serve.

For a lot of people pitted dates are something that are only used in fruitcake at the holidays. However, they make a great vehicle for sweet and delicious desserts all year ‘round.

This recipe is deceptively simple. Blend the three ingredients together and roll into balls, coat with coconut and you are done. While each of the coconut balls is 100 calories, they are super delicious and have a ton of great quality fiber. A rich treat that is great to keep around but also one that is perfect to serve at your next dinner party.
