Cilantro Lime Dressing

This recipe can easily be multiplied and keeps well for a few days in the refrigerator.

Ingredients
1 cup Coriander (cilantro) leaves, raw |
1 cup Nonfat Greek Yogurt |
1 Tbsp. Honey |
1/2 medium Poblano Pepper (stemmed, seeded, and diced) |
1 medium Green onions (sliced crosswise) |
1/2 tsp. Salt |
1 to taste Black pepper |
1 lime yields Lime juice, raw |
Instructions
Place the cilantro, yogurt, honey, pablano, green onion, salt, pepper and lime juice in a blender or a tall immersion blender container.
Using the blender or immersion blender, process until smooth.
Chill.

This dressing is sweet, spicy, tangy and a bit salty all at the same time. A great balance of flavors with a Southwestern vibe. The Greek yogurt is not a must with this, but using it rather than ordinary yogurt will give you a much richer, creamier dressing.
