Chopped Caesar Salad with Shrimp

This recipe can easily be multiplied, but once dressed, does not make good leftovers.

Chopped Caesar Salad with Shrimp

Ingredients

2 tsp. Olive oil
8 Ounces Shrimp, raw (peeled and deveined)
1 15 ounce can Canned no salt added white beans (drained and rinsed)
2 Tbsp. Pine nuts
8 leaf outer Romaine lettuce (chopped)
1 large Green onions (thinly sliced crosswise)
1/2 cup Croutons, plain (or gluten-free croutons)

Instructions

Place the water in a medium pan fitted with a steamer basket over high heat.

Add the shrimp and cook for about 4 to 5 minutes until pink.

Remove from the heat and cover with ice to cool.

Place the garlic, Worcestershire sauce, parmesan, salt, pepper, white beans and yogurt in a blender or mini chopper and puree until smooth.

Slice the chilled shrimp in half lengthwise. Place in a mixing bowl with the celery, green onions and dressing. Fold together until smooth.

Chill well before serving.

Serve on top of the romaine lettuce.

Serve this recipe with one of these starch side dishes.

Caesar Dressing

Place the garlic, Worcestershire sauce, pepper, lemon juice, mustard, honey, parmesan cheese, and yogurt in a blender or mini-chopper and process until smooth. Chill for at least 2 hours.

Caesar Salad Dressing is so versatile. There’s nothing quite as good as a classic Caesar Salad but you can use the dressing for sandwiches, on top of grilled veggies, and this chopped salad variation is a delicious reason to make your own Caesar dressing and keep it on hand.
