Buttermilk Tarragon Salad Dressing

Ingredients

1/2 cup Reduced fat buttermilk
1 tsp. Lemon zest (minced)
1/2 lemon yields Lemon juice
1/4 tsp. Salt
1 tsp., ground Dried tarragon
1 ounce Semisoft goat cheese
1/2 tsp.. Honey

Instructions

Place the buttermilk, lemon zest, lemon juice, salt, tarragon, goat cheese, and honey in a mini-chopper or blender.

Process until smooth.

Chill well before serving.

Salad dressing should not be too complex. Liquids such as oil and something acidic, or creamy ingredients like yogurt, sour cream, or mayonnaise combined with simple seasonings work perfectly for a rich and creamy dressing.

Vinaigrette is the epitome of this: simple oil and vinegar, whisked together until smooth and accompanied by herbs, mustard, or other flavors.

In this recipe, the combination of the creamy goat cheese and tart buttermilk go perfectly with the fragrant tarragon and lemon. You can substitute other herbs for the tarragon to create great variations on this, including basil, thyme, or marjoram. Fresh herbs will really enhance the flavor and you would want to use about three times as much – for every one teaspoon of dried herbs use three teaspoons of fresh.
