Cheese, Fontina
This is a cow’s milk cheese that is very high in butterfat content. It is named for the valley in Italy where it originates and has a rich, slightly spicy flavor with nutty overtones. Technically, fontina is a cheese that is made from raw milk, and fontina-style cheese, made from pasteurized milk, is referred to as fontal.
Fontina melts easily but will tend to run. It is an especially good cheese to use on top of a recipe where it will melt and combine with the other ingredients.
