Boiler, Double
You don’t have to have a double boiler. If you cook a lot and especially for some sauces it can be an essential piece of equipment.
For occasional use a 6 quart sauce pan with about 2 inches of water in the bottom works great. Heat this over a burner on medium-high heat. Depending on how much you are cooking use a 2 1/2 or 4 quart Pyrex mixing bowl placed on top of the boiling pot of water.
This is works well because you can also see through the glass into the pan to keep an eye on the boiling water.
