Can you please let me know if there is any vitamin K in the green tops of sprouted mung beans? I have been taking Warfarin (Coumadin) for a couple of years now (since a heart valve replacement). I am also a vegetarian.
1/4 cup of raw mung bean sprouts has 8.6 micrograms (mcg) of Vitamin K. This would be for the whole sprout as I have not been able to find any source that gives the Vitamin K content of just the green tops of the sprouted mung beans.
An ingredient that is under 10 mcg of Vitamin K would be considered low in Vitamin K content. However, if you are eating a great deal of mung bean sprouts this could be a problem. A full cup would be considered to have a moderate amount of Vitamin K and could have an effect on your Coumadin® (warfarin) activity.
Some other alternatives are:
1/4 cup of raw alfalfa sprouts has 2.5 micrograms of Vitamin K.
1/4 cup of raw kidney bean sprouts has no Vitamin K.
1/4 cup of raw navy bean sprouts has no Vitamin K.
