Could we lower the Vitamin K amount in the Potato and Three Onion Gratin by choosing another type of onion than leeks? Which type of onion would be best?
This is a great question. There's a fair amount of Vitamin K in the leeks - about 38 micrograms (mcg) in the 3 ounces per serving in this recipe. Substituting a Vidalia or other sweet onion like a Walla Walla would be a great choice. If those are out of season, choosing a yellow onion would be perfect.
