Why is [your Roasted Root Vegetables recipe] NOT safe for Coumadin users? I don't see any ingredients with high Vitamin K content.
Great question! While no single ingredient in the Roasted Root Vegetables recipe would be considered high in Vitamin K on its own, you can see from the nutrition information that a single serving still contains 25 micrograms of Vitamin K. We consider that to be very high for a vegetable side dish, when our target for a safe complete dinner meal of protein, starch, and vegetable is a total of about 35 micrograms.
Our approach to managing Vitamin K intake is to keep the total daily amount stable at about 80 micrograms per day (read more about that: "The Right Dose of Vitamin K"), so you can see that 25 micrograms is a big portion of your daily total.
