I love your Vit K list showing low, medium, high levels of Vitamin K. I did not see zucchini listed. I roast it with yellow squash and peppers in a small amount of olive oil and need to know if I should peel it. Thank you for your wonderful website. It is very educational and I am going to share the info with my family physician so he can point other warfarin patients to it.

According to the USDA, a medium sized, raw, and unpeeled zucchini has 5 micrograms (mcg) of Vitamin K and a cup of chopped zucchini (also unpeeled) comes in at 8 mcg. This would be considered a low amount of Vitamin K when the daily RDA is 76-80mcg.
