Moroccan Spiced Sweet Potato Soup

Roast the sweet potatoes ahead of time (maybe when roasting something else in the oven) and store them in the fridge until needed to make the soup.

Alternatively, you can microwave the sweet potatoes: place the washed, dried, and pierced sweet potato on a paper towel and microwave it on high for 3 minutes. Turn it over and microwave for 2 more minutes or until fork tender.

Optional: garnish with roasted chickpeas.

Moroccan Spiced Sweet Potato Soup

Ingredients

1 1/2 lb Sweet potato
1 Tbsp. Olive oil
1 large White or yellow onions (diced)
3 clove Garlic, raw
2 tsp. Ground cumin
1 tsp. Smoked paprika
1 Tbsp. Ground coriander
1 tsp. Ground turmeric
1/2 Tbsp. Red Pepper Flakes
1/2 tsp. Caraway seed (ground)
2 1/2 tsp. Ground cinnamon
4 cups No salt added vegetable stock
2 Tbsp Lemon juice
1/4 tsp. Salt
1 dash Black pepper (to taste)

Instructions

Preheat oven to 400F.

Line a baking sheet with parchment or foil.

Scrub sweet potatoes well, then poke several times with a fork.

Bake sweet potatoes on prepared pan in the center of oven 1 hour, or until tender. When the potatoes are done, set aside to cool.

In a large pot heat oil over medium heat.

Add onion and garlic, saute, stirring often, about 5 minutes, or until onions are translucent.

Add cumin, paprika, coriander, turmeric, pepper flakes, caraway, cinnamon, salt, and pepper. Cook, stirring continuously, until fragrant.

Add stock, chickpeas, and lemon juice and bring to a boil.

Slice the cooled potatoes in half lengthwise, scoop out the flesh, and add to the pot.

Using an immersion blender, puree the soup, blending until smooth, or carefully transfer to a blender to puree.

Serve hot.
