Thickening – Rice
Rice, like any starch, makes a great thickening agent. Because you don have to worry about a dry, floury taste and because it doesn't add any fat, it's perfect for making healthy soups and sauces.
The key is that the rice must be cooked thoroughly so that it is completely soft. Otherwise, when you puree the recipe it will have a grainy texture.
